What's for dinner? Vegetable & Beef Soup!
Ingredients: 1 pound cubed meat or lean ground beef 1/2 cup onion diced 1 tablespoon Olive U & More Garlic Olive Oil 6 cups beef broth 14 ounces diced tomatoes 4 tablespoons tomato paste 1 tablespoon Worcestershire sauce 1 teaspoon Olive U & More Mediterranean Oregano 1 teaspoon Olive U & More Dried Basil 1 tablespoon Olive U & More All Purpose Seasoning 1 teaspoon Olive U & More Granulated Garlic Salt & Pepper to taste 2 cups elbow macaroni uncooked 2 cups frozen mixed vegetables
Directions: 1. In a large pot brown beef and diced onion in Olive U & More Garlic Olive Oil. Drain any fat.
2. Add broth, tomatoes, tomato paste, Worcestershire sauce, and seasonings. Bring to a boil. Simmer on low for 30 minutes.
3. Stir in elbow macaroni and vegetables, simmer an additional 10 minutes or until macaroni is tender. Serve with shredded Parmesan cheese on top and Sweet Yellow Cornbread muffins. It was AMAZING last night!! YUM
